I absolutely love baking, and having goodies in the house to snack on is always the best.
But sometimes, there’s just too much damn sugar.
So, I went on the hunt for a healthy snack I could bake to fulfill my baking obsession and also fill my sweet tooth cravings.
And low and behold I found a super simple recipe pertaining of bananas, oats, and raisins. That’s it.
So I had the bananas, had the oats. But, I reeeeally don’t like raisins so I definitely didn’t have any of those.
Now this recipe was sounding a little boring to me. So I decided to throw in a few extra things and see how she goes!
I give you my Banana Oat Cookies!
I was so pleasantly surprised with how moist and yummy these are!
I started out with the recommended two ripe bananas and one cup of oats from Listotic’s blog post about healthy three ingredient treats. Her whole blog is lists of things, which is totally my jam.
Anywho, since I wasn’t adding the raisins, I needed something for taste. Now I know I know, chocolate chips are naaat healthy, but a few of them never killed anyone!! C’mon people, I neeeeed my chocolate fix.
Then I decided to toss in some vanilla, cinnamon and salt for a little pizzazz.
I was pretty hesitant at first, but after making them a few times now I’ve perfected the measurements and damn they’re pretty darn good!
And, they’re gluten-free, dairy-free and vegan!
If you care about that sorta thaaang….
- 2 ripe mashed bananas
- 1 cup quick oats
- 1/4 tsp vanilla
- dash of cinnamon
- dash of salt
- 1/4 cup chocolate chips (optional)
- Mix ingredients together in a bowl.
- If batter seems too runny, add more oats
- Scoop onto cookie sheet in small mounds
- Bake for 15 minutes at 350°F
